Our production activities focus on the sturgeon, which, as well as being a source of fish meat, is bred especially to produce caviar. The young fish spawn in our own breeding ponds and are raised there until they attain a weight of around 30g. Within two years, these fry grow in the fattening ponds until they weigh approx. 3 kg. The females are then identified using a special method and separated from the males, which are processed into marketable products. The female sturgeon grow in the farm’s caviar ponds until at 4 years of age they weigh about 8 kg and are now fertile, i.e. the roe can be removed to produce caviar. The caviar is cleaned, washed, lightly salted and tinned. It has the same quality as Ossetra caviar.
UFT AG’s recirculation technology is also ideally suited for all other species of game fish and seafood delicacies. The company operates farms in close collaboration with its co-operation partner, AquaOrbis AG.
Aquaculture plants therefore represent an ideal combination of economy, ecology and quality.
